Merry Berry Dessert

2 cups fresh strawberries
Sift together:
1 teaspoon salt,
1 teaspoon soda,
1 1/4 cups sugar
Add and beat until smooth:
1/2 cup shortening (margarine),
1/2 cup sour cream,
3 eggs,
1 teaspoon vanilla
Pour into 12" x 8" x 2" pan
Bake at 350 degrees for 40 - 45 minutes
To serve, cut into pieces and top with whipped cream, ice cream, and more fresh berries.
Fresh Strawberry Pie
Mix 1 generous cup flour and 3 1/2 Tbsp conf. sugar. Cut in 1 stick of oleo. Press into 9" pie pan. Bake at 350 degrees for 20 minutes.
Mix 1 cup sugar, 3 Tbsp corn starch and 1 cup water in saucepan. Cook on med heat until clear. Add 3 Tbsp strawberry jello and mix well. Pour over fresh strawberries in pie shell. Cool in refrigerator. Top with whipped cream.

Strawberry Shortcake Bowl
Serves 6 to 8
2 pints sliced strawberries
Sugar to taste
1/4 cup butter, melted
1 (9 1/2 oz) container of refrigerated flaky biscuits
1/4 cup sugar mixed with 1 1/2 teaspoons cinnamon
1/2 cup chopped pecans
1 cup whipping cream, mixed with 1/4 cup sugar and whipped
1. Sweeten strawberries with sugar if desired. Refrigerate for 30 min.  
2. Preheat oven to 400 degrees.
3. Brush baking sheet with melted butter.
4. Separate each biscuit into 2 thinner biscuits by pulling apart between layers. Lightly brush both sides of each biscuit with melted butter. Dip both sides in sugar-cinnamon mixture: place on baking sheet, leaving about 1 inch between biscuits.
5. Sprinkle biscuits with pecans and press into dough. Bake for 10 or 12 minutes, or until browned.
6. Line large serving bowl with about 15 biscuits. Spoon half the strawberries over biscuits: spoon whipped cream over berries. Arrange remaining strawberries over whipped cream: Top with remaining biscuits.
Serve immediately.
Strawberries San Remo
Serves 4
1 pint fresh strawberries, hulled and halved
3 tablespoons plus 1/3 cup sugar
3 egg yolks
1 teaspoon vanilla extract
pinch of nutmeg
1 tablespoon brandy
2 cups plain yogurt
2 tablespoons sliced almonds
Shaved chocolate or chocolate sprinkles for garnish
1. Combine strawberries and 3 tablespoons sugar in a bowl: cover and let stand for 15 minutes.
2. To prepare topping, beat egg yolks, 1/3 cup sugar, vanilla, nutmeg, and brandy together until smooth: fold in yogurt.
3. Spoon strawberries into 4 sherbet dishes. Cover with yogurt topping.
Garnish with almonds and shaved chocolate or chocolate sprinkles.
Uncooked Strawberry Cookies
2 pkgs strawberry jello
1 cup chopped pecans
1 cup fine coconut
3/4 cup Eagle brand milk
1/2 teaspoon vanilla
Mix well and shape like strawberries. Roll in red sugar. Dye slivered almonds green for stem.
